Matcha Kumquat Lava Tart (15cm)
Chef Aska carefully selects ripe kumquats from Miyazaki Prefecture to make the lava jam of this matcha tart. Miyazaki kumquat is well known for their thin but fresh aromatic peel and plumply flesh. The kumquat can be eaten whole with the skin. So, the kumquat peel is mixed in to retain the best aroma for making the jam. In addition to the Miyazaki kumquats, Chef Aska also mixed white wine and pear puree to enhance its taste. Paired with the bitter-sweet aroma of Kyoto matcha, the delicate fragrance spreads endlessly in the mouth.
